we’ve taken inspiration from this process to fuse japanese influences & modern french pastry
a rich chocolate mousse, made from a blend of fine valrhona chocolates & sensationally fragrant hawaiian vanilla beans hides layers of moist chocolate cake, toasted sesame & hazelnut crisp, smoky & pleasantly chewy caramel sauce, a ganache of salted milk chocolate & hawaiian vanilla beans, with a touch of runny-yet-delicately crunchy sesame-hazelnut praliné
the cake is coated with blackened chocolate that we meticulously craft for an impossibly realistic charred finish
