we retain all the classic elements of the dessert that originally resembled a mountain peak, along with extra surprises that enhance the chestnut experience
a base of crunchy french meringue is spread with a layer of rummy puréed chestnuts studded with chunks of marrons glacés, a silky custard of chestnut & chestnut honey, our own bright & tingly cassis jam, all wrapped in an airy mousse of fresh cream, vanilla & chestnut honey
the cake is finished with a brilliant glaze of chestnut-hued milk chocolate flecked with gold then wrapped in a band of caramelized white chocolate for added texture & milkiness
the cake is adorned with a single perfectly glazed candied chestnut
